Butter-Basted Seared Scallops

The classic, restaurant-style scallop preparation that’s perfect for date night. Serve with a hearty side salad, vegetables, and your favorite buttery whipped potatoes for an unforgettable meal. Serves 2-4.

  • Ingredients

    3 tbsp full-fat butter
    2 tbsp high smoke-point oil
    2 tsp kosher salt
    3 cloves garlic
    4 sprigs rosemary
    4 sprigs thyme
    1 shallot sliced in half

  • Instructions

    1. Set your skillet on the stove and turn your burner to high heat. Let the pan get ripping hot (~5 mins) before adding your oil.
    2. Carefully set your scallops in the pan and sear on one side until crispy and browned (~3 mins), being careful not to overcook. Flip scallops and repeat.
    3. Once the other side is nearly done (~2 mins), add your butter, garlic, thyme, shallot and rosemary to the pan. Turn off the heat and push scallops to the back of the pan. Tilt your pan towards you and generously baste the melted butter on top, making sure to incorporate all of your aromatics.
    4. After 1 - 2 minutes of basting, remove scallops from the pan and place on a wire rack or plate to rest. Drizzle a small amount of your pan butter on top before serving. Enjoy!
