Scallop Crudo Served In-Shell

The best recipe to highlight the Vertical Bay difference, and our personal favorite for a quick, fun, and delicious meal at the end of a long day! It’s hard to beat sliced, sushi-grade scallops served in-shell with a refreshing citrus and olive oil dressing. We’ve provided some of our favorite pairings in our Crudo Sampler, but feel free to follow the recipe below for an appetizer that will leave you craving more. Serves 5.

  • Ingredients

    1 lb Vertical Bay Scallops (4 per person)
    5 Vertical Bay scallops shells (1 per person)
    1 ½ tsp extra virgin olive oil
    The juice and zest of 1 lemon
    Flaky sea salt

  • Instructions

    1. Using a sharp knife, slice your scallops along the horizontal axis to form thin “discs.” Lay your scallops in the accompanying shells.
    2. Drizzle lemon juice and extra virgin olive oil on top of your sliced scallops, being careful not to “overdress.” Garnish with flaky sea salt and a pinch of lemon zest before serving.
